Sunday Cupcakes

It seems like an awfully long time since I have done any baking although in reality it’s probably only a couple of weeks. I thought it was time to fire up the Kitchen Aid for some chocolate cupcakes this weekend and it also gave me chance to try out my new mini chopper for chopping up some chocolate to put them in.

I used some mini Oreo’s to decorate the first batch of full size cupcakes, along with some vanilla buttercream.

IMG_9022The next six revisited the Black Forest (ish) cupcakes that I made a couple of weeks ago as they went down very well last time. The cupcakes have a yummy cherry filling, topped with buttercream and chocolate sprinkles along with a cherry on the top of course.

IMG_9023Of course, I can’t make chocolate cupcakes without making far too much cake batter as usual and so I ended up with a batch of mini cupcakes too, my favourite! I used lots of different things to decorate these – the ones above are buttercream with mint matchmakers and the ones below are buttercream with some different sprinkles from the cupboard…

Sunday Cupcakes

I love it when inspiration strikes for making cupcakes. I have no idea where it came from but I was just nicely minding my own business last Thursday when all of a sudden I was struck with the idea of making Black Forest Cupcakes at the weekend.

To be fair, these are probably just Black Forest-ish Cupcakes as I realised when googling later that I probably needed black cherries and kirsch, not the morello cherry jam that I ended up with from Tesco! But hey, they tasted good and that’s what we are looking for, right?

I used the chocolate cupcake recipe from Cupcake Jemma’s book (she does fab video’s on You Tube by the way, if you are interested!!) and then when they had baked and cooled I dug a little section out of the top with my apple corer, spooned a bit of cherry jam inside and then pushed the top back down. I used vanilla buttercream for the frosting and topped them off with some chocolate sprinkles and a glace cherry.

I have also found some mini cupcake liners that fit my mini cupcake tray perfectly, so I had to use up the rest of the batter on mini cupcakes of course!

Sunday CC2 11.1I am completely in love with mini cupcakes and may have to abandon the full size ones in favour of these because they are just too cute, and the best bit is that you don’t feel as guilty when eating them. Although if you eat two or three in a row, the guilt does tend to creep back in 😉 No cherry jam in these ones, they are too little. Just chocolate cupcakes with vanilla buttercream, chocolate sprinkles and a cherry on top. Delicious!


Sunday Cupcakes

Jamie and I usually go to my parents for lunch on Sundays and I have got in to the habit now of bringing cakes with us. Here’s what I made for today – just a basic vanilla cupcake, with a fondant icing topper. I went for a quilted look for the topper, along with a fondant rose and some leaves using a new cutter I picked up yesterday at the Range.

I just made 6 cupcakes so I used the left over cake batter to make some mini cupcakes. I dipped them in yellow Candy Melts and then Jamie and I used some decorating icing to draw on some Emoji faces! I clearly need a lot more practice at drawing with icing – the internet makes it look so easy!


First time using fondant…

I was really lucky at Christmas and got lots of baking and cake decorating supplies along with a very generous Hobbycraft gift card from my team at work, so I thought it was time to have a go at some fondant icing! I was at the doors of Hobbycraft at 9.05am on Boxing Day so I could get in and out before the traffic built up 😉

I bought some ready made fondant icing in a variety of colours, some cutters, and some other bits and pieces including a rather nifty cupcake carrier that I had my eye on pre Christmas and had gone to half price in the sale so that was a result. I watched a few You Tube videos to get the idea (what did we do before You Tube tutorials??) and then had a go. I don’t think I did too badly for my first attempt!

Some Christmas Baking…

Good afternoon people on this cold and frosty New Years Eve! Given the redesign and rename of my blog I thought it was time to share some of my Christmas baking with you. I made chocolate cupcakes with vanilla buttercream, vanilla cupcakes with chocolate buttercream, and some teeny tiny micro miniature chocolate cupcakes that I turned into Christmas puddings – these seemed to be the most popular with everybody after a big meal! IMG_2618

I used a variety of Christmas sprinkles and decorations that I picked up in Asda and Hobbycraft in December, along with some little gingerbread man biscuits that came from Marks and Spencer. I actually made the little fondant holly leaves and berries on the top of the Christmas puds myself and I must say I was ridiculously impressed with myself for doing so given it was only the second time I had done anything with fondant and didn’t have a holly leaf cutter so had to improvise!

Swanky Snowdudes!

Snowmen are definitely the easiest thing ever when it comes to colouring 😉 just a little bit of colour for the hats and scarves needed! I used Paper Smooches Swanky Snowdudes stamps set, Lawn Fawn Stitched Hillside Borders and Stitched Rectangles, and I think the snowflakes are Tattered Lace dies. Possibly.


Christmas Wishes

I waited so long to get my hands on this stamp set from Lawn Fawn! Still, I made the most of it once it finally arrived. This was a really simple almost one layer card using Lawn Fawn’s Joy to the Woods stamp set, Stitched Hillside Border dies and a Christmas word die from Paper Smooches. I used some Tumbled Glass distress ink for the sky and then randomly dropped some dots of white enamel accents on the background to create some falling snow.

Very much inspired by this card from Nicole which I loved, I used Lawn Fawns Finlay’s ABC’s dies for the “Holidays” along with the lovely Winter Penguin in place of the O. I used my ProMarkers to colours the different letters which seemed an awful lot easier than trying to find a variety of different coloured cardstock!

Christmas Bunnies!

Back to the Lawn Fawn Merry and Bright set for this one! I used my Spectrum Noir pencils to colour the bunnies and embossed the sentiment in gold embossing powder. I used the Lawn Fawn stitched hillside border dies for the background along with a few sparkly sequins…
